Vanilla Pecan Biscotti

A rich blend of vanilla and pecan render these biscotti the perfect match for a cup of hot coffee!


  • Unbleached flour - 2-1/4 C
  • Pecans - 3/4 C
  • Baking powder - 2 tsp
  • Sugar - 1/2 C
  • Salt - 1/2 tsp
  • Flax meal - 2 Tb
  • Water - 3/4 C


Preheat oven to 325º F. Chop pecans; set aside. Add baking powder, flour, sugar, and pecans in large bowl. Add flax seed meal to blender along with water. Blend until frothy. Add with vanilla to mix. Shape into 3″ wide log, flat. Bake for 30-40 min. Remove biscotti and allow to cool ten minutes or so. Cut into individual slices with serrated knife. Reduce oven to 300º. Bake an additional 10-20 min on each side, or until biscotti is crisp. Drizzle with glaze (confectioner’s sugar mixed with a little water) while warm, or dip end in melted dark vegan chocolate.
